Garden egg sauce is often cooked and eaten with staple foods like yam or rice. It has come to be a meal well appreciated by people because it is easy to prepare and nutritious. The garden egg can be boiled, mashed and garnished with vegetables and other ingredients.
Garden egg is used as a snack in some parts of Nigeria. In the southeastern part of Nigeria, it is eaten with groundnut paste or peanut butter.
If it is your first time hearing about garden egg sauce, below is a simple way to prepare the meal.
Ingredients
- 6-8 large garden eggs (any variety or shape will do)
- 2 tablespoons of groundnut oil
- 1/2 of a medium onion, thinly sliced
- 2 large bell peppers or tatashe
- 2 hot peppers (or ata rodo)
- 1 medium onion, roughly blended
- Smoked fish, washed thoroughly and shredded
- 1 tablespoon of ground crayfish
- Seasoning cube, to taste
- Salt, to taste

Directions
- Boil the garden eggs for five minutes. Remove from heat and set aside to cool.
- Peel the garden eggs skin by gently pulling on the thin white coating. (You can also cut and remove the seeds in the centre if you prefer).
- Roughly chop up the peeled garden eggs or lightly crush them with a mortar and pestle.
- Set a pot on medium heat, then add in the groundnut oil.
- Wait for two minutes, then add in the onions. Fry the onions until translucent.
- Add in all the other ingredients except the fish.
- Reduce the heat to medium and simmer the sauce for 10 minutes.
- Add the crushed garden eggs and fish into the sauce.
- Taste and adjust for seasoning. Simmer for another 2-3 minutes.
