Vegetable Omelette is one easy yet satisfying dish you can prepare for your family this weekend. This simple meal prepared with eggs is really quick to make and if your weekend is already booked with a lot of activities, you won’t be wasting time in the kitchen at all.

 

Vegetable Omelette can be eaten as full meals and served it with bread, fried plantain, yam, potatoes or even rice.

Ingredients

  • 3-4 Eggs
  • 1/4 Red bell pepper, chopped
  • 1/4 Green bell pepper, chopped
  • 3 Tablespoons vegetable oil
  • 1 Small onion, chopped
  • Teaspoon garlic /powder
  • 1 Seasoning cube
  • Salt to taste

Preparation:

Whisk the eggs, seasoning cube, garlic powder, and salt till fluffy and set aside. Place a non-stick frying pan on medium heat, when it heats up, add the chopped onions and saute till translucent. Then, add the chopped red and green bell peppers, continue to saute for another minute.

Then slowly add the whisked eggs. Do not mix the eggs together, wait till the eggs are fully set at the bottom of the pan, this should take roughly two minutes.

 

When it is fully set, gently lift the edges of the omelette with a spatula to allow the uncooked parts of the eggs to flow towards the edges and cook as well.

This should take a further minute or two. Now, fold the omelette over. Take it off the heat at this time and serve.
